“If it’s not dairy, what is it?”
One of our most asked questions at the shop. Even those not partial to vegan ice cream are curious. There isn’t only one answer, though. Our kitchen staff will tell you it depends on the flavor we’re creating. When we first opened the shop, all our vegan flavors were made with organic coconut cream, sweetened with agave and brown rice syrup. Since opening, we’ve expanded our vegan bases to include almond butter, cashew butter, and peanut butter. Classic flavors like our hand-cooked Chocolate and the crowd favorite Cookie Butter are still made with a coconut cream base. However, other flavors like seasonal Irish Coffee and Caramel Apple Spice are made with an almond butter base. Most recently, we’ve experimented with cashew butter and peanut butter. Pistachio, which was once a coconut cream base, has now been switched to a cashew butter base. “It all comes down to taste. We were interested in experimenting with the creaminess of the cashew butter as a more neutral flavor,” says Assistant Chef Chris. Along with Pistachio, a new Cherry Vanilla Bourbon with a cashew butter base has made it’s way into the vegan dipping case. “Coconut cream has a strong flavor that sometimes comes through in the ice cream. Cashew butter is a great alternative,” explains Chris. We’ve also started introducing peanut butter as a vegan ice cream base option. Peanut Butter Chocolate Chip is the latest and only peanut butter base flavor so far.
So, depending on the desired taste & texture, our vegan ice cream begins with any of the four bases mentioned: Coconut Cream, Almond Butter, Cashew Butter, or Peanut Butter
